 jerusalem artichoke and prickly pear cactus

At the school where I teach, we received a grant which has as its major
emphasis a garden-based nutrition approach.  We would like to focus on foods
that are beneficial for diabetics.    I have read a few articles touting
both plants as beneficial for diabetics.  Does anyone have personal
anecdotal evidence, or can you point me to other reading?   Thanks.

The "psychic" Edgar Cayce claimed that Jerusalem
artichokes were good for diabetes because they contain
insulin.  I guess he was channeling a spirit that had
poor reading comprehension.  Jerusalem artichokes
contain inulin, not insulin.
