
What is lactose intolerance, anyway?
What are the mechanics behind lactose intolerance? Granted, lactose
becomes indigestible for some people, but people eat lots of indigestible
things without GI problems. Do victims wind up with lactobacilli
cultures in their GI tracts, partying and leaving fermentation by-products
behind (lactic acid, perhaps?) Or is it an allergic reaction to lactose
itself?
Also, what triggers the intolerance? Is it the loss of the ability
to split lactose apart into monosaccharides, or a loss of the ability
to digest the galactose part of the molecule?
