Can anyone tell me what the name of the enzyme that bacteria use to
break down plant fibers (cellulose) in herbivores is?

I'm not a zoologist, but FWIW, _Encyclopaedia Britannica_ refers to the
enzyme as, appropriately enough, "cellulase." ;)
