 Gluten Intolerance

My wife was diagnosed with gluten intolerance.  The system was her
abdomen was growing daily.  Supposedly, undigested bread products were
backing up.

What would trigger the onset of such a condition in a middle aged
female?

Is there an enzyme or supplement which helps digest wheat protein?

Is there a recommended therapy?

Nobody knows the cause of "gluten sensitive enteropathy" as it is called.
Many believe that it is an autoimmune disease.  Apparently some of
molecules in gluten look like natural body molecules and every once in a
while a person will attack their own body as if it were the gluten
molecule.

As far as I know the only treatment is to completely eliminate gluten from
the diet.  If this is done, all other digestive problems are supposed to
completely disappear.  However, even a single meal with gluten in it is
said to result in the recurrence of symptoms.

Gluten intolerance is the result of an immune reaction to a protein
(gluten) found in wheat, oats and barley. It usually manifests in two
ways: celiac disease, which is characterized by chronic diarrhea, weight
loss, and bloating; and/or dermatitis herpetiformis, a skin disease that
consists of clusters of very itchy, burning blisters. The only treatment
for celiac disease is a gluten-free diet (a dietician could guide you in
this); there is no medication or supplement (as, for instance, with
lactose intolerance). DH can be treated with medication.

If it's celiac disease, heredity has something to do with it.

A gluten-free diet. There is much information available on the WEB -- You
could start at the Gluten-Free page (http://www.panix.com/~donwiss/).

Some health insurance plans will subsidize the increased cost of
gluten-free cooking.net">food products.
